Blackberry Breakfast Bars
Ingredients
FILLING
2 c fresh (or frozen) blackberries
1 Tbsp honey
1 Tbsp lemon juice
1/2 tsp ground cinnamon
CRUST & TOPPING
1 1/8 c whole wheat flour
1 1/8 c old fashioned oats
1/4 c flaxseed meal
1/4 tsp ground cinnamon
1/8 tsp baking soda
1/4 c honey
1/8 c blackstrap molasses
1/2 c applesauce, unsweetened
Go to a local, sustainable, no spray farm and enjoy the morning picking plump, juicy blackberries with your granddaughter. Eat any berries that explode. Giggle together about your pink stained hands. Go home and think about yummy stuff to bake when you're tired of canning and freezing.
Preheat oven to 350 degrees.
In a mixing bowl stir together flour, oats, flaxseed, cinnamon and soda. Stir in honey, molasses and applesauce till thoroughly combined. Set aside 1 cup of the oat mixture for topping. Press remaining oat mixture into an ungreased 8" x 8" x 2" pan. Bake in a 350 degree oven for 20 to 25 minutes. Prepare filling while the crust bakes.
For filling, in a medium saucepan combine berries, honey, juice and cinnamon. Bring to a boil. Reduce heat. Simmer, uncovered, for
about 8 minutes or till slightly thickened, stirring frequently. Remove from heat.Carefully spread filling on top of baked crust. Press reserved oat mixture into thin patties before gently laying them on top of filling. Lightly press oat mixture into filling. Bake at 350 degrees for 20 to 25 minutes more or until topping is set.
Cool in pan on a wire rack. Cut into bars. Makes 16 bars.
